Everytime i tried to change to OpenGL render on Ubuntu the internal resolution setting is grey out and it gets reset to software, on windows it works perfectly fine, any suggestions of how to fix it?

what kind of GPU do you have? Chances are that either it or the driver you have installed for it are too bad.

I use Nvidia hardware. Nvidia does not have very strong driver support from linux as I have learned as my installation is running on really outdated drivers. And they are labled as "latest" for Linux devices. If the issue is Graphics drivers. This one may be unsolvable without a massive workaround.

Nvidia drivers on Linux are up to date. (The only thing bad about them that affects me is that it has limited Wayland support, and Xorg doesn't support having multiple monitors with different refresh rates.)

It's most likely that you just haven't installed the drivers.

I have an amd ryzen 3 3200g, using the vega 8 integrated gpu, drivers should not be the problem with amd gpus on linux.
